Onsen Eggs Made with Eggs Fresh from the Nest Box

Good morning! Basil the duck is with me today. Another blue sky. Don’t fly at me before I’ve even opened the door!

Morning rounds

Happy the pigeon is completely at home in the chicken coop now. Isn’t he scared of the big chickens? Good morning over here, too. This is Star, the rooster. Silver is so gentle with me. Kinako, who is low in the pecking order, gets to eat with everyone too. Chive the duck and our Leghorn roosters are different species and different sexes, but they look alike!

There’s a long line of birds who can’t wait today. This one can see the food in my hand very well. This one looked like a Dalmatian, so his name is Dal — and his pattern is slowly changing. Health check under way.

Chako, Banana, Marron and Cloud are desperately trying to eat the grain growing out through the net. And Natsu is watching, wanting to get inside where everyone is.

Hot-spring egg cooking

Good morning — I’ll take this one. With this egg, I’m going to make onsen tamago, Japanese hot-spring eggs: eggs cooked gently in hot water until the white and yolk are soft and silky. Cooking time!

The only ingredient is eggs laid just now — almost too fresh. Set them in a special egg cooker, pour boiling water into the container, and quickly put the lid on. With three eggs this time, it takes about 17 minutes. When the time’s up, open it — careful, it’s hot. Let’s crack one… done! It looks delicious, a proper hot-spring egg.

I brought dashi soy sauce from home to pour over it. (Tip: plastic chopsticks aren’t great for hot-spring eggs.) Delicious! It tastes like a Japanese inn — I feel like I’m in Japan. It turned out so well that I hope you’ll try it too.

It was so good I cracked a second one: wobbly, with a lovely color. Let’s make more! The third came out like this, with a perfectly round yolk. What’s different? Maybe more time passed and the leftover heat set it more. Still a beautiful color, and just right. So good that I ate all three by myself!
